Thursday: Black Bean-Avocado Burritos with Steamed Broccoli

 
 Here's a SUPER-DUPER easy recipe with minimal ingredients to make on a night that you just want something simple. Just add steamed broccoli to it and Voila! Dinner is served. This one I got from last month's Rachael Ray magazine.

Burrito Recipe

2 TB olive oil
  2 15oz cans black beans, drained and rinsed
2 cloves garlic, minced

salt and pepper

  4 burrito sized whole-wheat flour tortillas

1 avocado, peeled and diced

1 cup shredded monterey jack cheese

1. Heat oil in a pot over medium heat. Add beans and garlic, season with salt and pepper. Cook and mash for about 5 minutes.
2. Wrap tortillas in a paper towel. Heat in microwave for 1 minute. Put beans, avocado and cheese on each of them. Wrap in paper towels, and microwave another minute or until cheese melts. Cut in half. Serve with steamed broccoli.

Who likes to CHANGE IT UP?

~Use Pinto beans or your favorite beans instead of black beans.
~Add guacamole and/or salsa instead of avocado.

~Add sour cream to the burrito.

Here are some helpful techniques to make life a little easier once dinner time hits. These tips will especially help those that work full-time and don't have a lot of time to prepare dinner.

~Make black bean filling ahead of time, keep in fridge and then heat up in microwave when ready to make burritos.

I tried this last night and it was SUPER fast to make, and they ate it super fast too!

YEY! Good to hear. This is definitely one meal that we make when we don't have a lot of time. It also works well as a lunch. I give it to my husband for work sometimes, and he loves it.
