Snack Idea: Delectable-Healthy Trail Mix Balls

 
These don't last long in our house...because they are just SOOOOO GOOD! They are filled with fiber, protein, and are sweetened with honey. The pumpkin seeds give them an iron and magnesium boost as well. Plus, they make great snacks on the go!  I bet you can't just eat one! 
 
Recipe
 
2 cups granola (I make my own...see here.)
1/3 cup peanuts, chopped (see other options below)
1/4 cup dried cranberries
1/3 cup raisins, black or golden
1/4 cup wheat germ or ground flax seed or a little of both
2 TB pumpkin seeds
2 TB shredded coconut
1/2 cup honey
1/2 cup peanut or almond butter

1. Mix all the ingredients from granola to coconut together in a large bowl.
2.Bring honey to boil in a small saucepan. Let boil for 30 seconds, then whisk in peanut or almond butter.
3. Add the honey mixture to granola mixture and stir to combine.
4. Form mixture into 1 1/2 " balls and place them on a baking sheet that has wax or parchment paper on it. Stick the baking sheet in fridge and wait till they have hardened, about 15-30 minutes. If you want to take them on the go, wrap each one in saran wrap or wax paper.

Who likes to change it up?

~Use your favorite nuts like almonds, hazelnuts, etc. instead of peanuts.
~Add cinnamon, ground ginger or nutmeg to give it a different flavor.

These are AWESOME!! My hubby even ate two immediately and commented on how good they were...this is a huge compliment, since he's not really into health food. They're the perfect size for a snack for my two-year old, too!! Keep these recipes coming! Love this blog!
