Tuesday: Peanut Butter Noodles...Hold The Jelly!

 
 This Cooking Light recipe has become a family favorite of ours for many years. Our daughter calls it the peanut butter with no jelly noodles. I LOVE colorful meals and this is definitely one of them! Add a nice green salad for a healthy, delicious meal.

Noodle Recipe
6-8 servings

  1 LB uncooked linguine

2 carrots, peeled

1 TB canola oil, divided
2 tsp grated peeled fresh ginger
3 garlic cloves, minced
1 cup chicken broth, preferably less sodium kind
1/2 cup natural-style peanut butter, with minimal ingredients
1/4 cup low-sodium soy sauce
3 TB rice or white wine vinegar
1 tsp chili garlic sauce
1/4 tsp salt
2 cups red bell pepper strips
1 lb snow or snap peas, trimmed
1/2 cup cilantro, chopped, optional
Sesame seeds, optional

1. Cook pasta according to package directions. 
2. Shave carrots lengthwise into thin strips using a vegetable peeler. In a medium skillet, heat 2 tsp oil and add bell peppers and snow or snap peas. Saute for 2-3 minutes. Add carrots. Saute for another 2 minutes. Set aside. 
3. Heat 1 tsp oil in small saucepan over medium heat. Add ginger and garlic; saute for 30 seconds. Add broth and next 5 ingredients. Whisk together until well blended. Simmer for 7 minutes, stirring occasionally. Add vegetables and pasta to peanut butter mixture and toss well. Sprinkle with cilantro and sesame seeds if desired.

Here are some helpful techniques to make life a little easier once dinner time hits. These tips will especially help those that work full-time and don't have a lot of time to prepare dinner.

~Prep vegetables ahead of time and store in fridge.

Who likes to CHANGE IT UP?

~Use rice instead of noodles to change things up.
~Add cooked chicken, pork or beef for those meat lovers.

~Try almonds butter instead of peanut butter.
~Replace bell pepper with tomatoes but leave the tomatoes raw.

I made this one tonight! My 5 year old wouldn't give it a fair chance, but the rest of us really liked it. We'll be happy to eat the leftovers for lunch tomorrow.

You know...my kids didn't care for it the first time either...but I tried it again, and the kids liked it then. Isn't that weird? :)
