We always have Monterrey Jack cheese, whole-wheat tortillas and spinach in our fridge just in case I don't feel like cooking an elaborate meal. Add some peas and a salad, and you have an effortless meal that is still healthy and delicious!
Quesadilla Recipe

4 whole wheat flour tortillas (Trader Joe's has a good one)
1 cup Monterrey Jack cheese
1/4 cup Parmesan cheese
1/2 cup spinach, chopped
1/4-1/2 cup chicken, cooked and cut up
Italian seasoning or Mrs. Dash
1. Stack the tortillas and place in microwave for 45 sec to 1 min. Place one tortilla flat on a cutting board. Sprinkle cheese layer, then spinach, then Parmesan then seasoning. Fold in half. Repeat with remaining tortillas.
2. Heat a large skillet over medium heat. Spray with cooking spray. Place 2-3 quesadillas in the pan and cook for about 3-5 minutes on each side until cheese has melted and tortilla has browned. Add peas and a nice salad to complete the meal. Dinner is served!
