Breakfast of Champions


Besides being a "foodie" another passion of mine is running. I love getting up in the whee hours of the morning and get a good 3-6 miles in, before my day of chaos starts. It is so peaceful and there is something extraordinary about watching the sun come up and see the world awake. Plus, I feel like I've accomplished at least ONE thing that day. :)

I am so blessed to have some awesome running buddies that keep me accountable and motivated to constantly push myself further and harder with my running. If you are looking to get into a healthy routine and make a lifestyle change in your life, the most important thing is to find an accountability partner. That can be a good girlfriend/friend, your husband, a family member, or a personal trainer. It's a commitment, but so worth the time you put into it. If you don't have any of the people I mentioned above, consider using the many online tools we have available. One of my favorites is a site called SparkPeople . It's a free online tool that helps you monitor your food intake (ie food journal), calculates how many calories you have burned with exercise, provides an awesome online community of people that are trying to make a lifestyle change in their lives, and so much more.


 Here's a yummy post-run breakfast I made this morning. It's filled with a healthy dose of healthy grains, protein and veggie vitamins. Enjoy!

Breakfast of Champions Recipe
Serves: 2 Prep: 10  minutes  Cooking Time: 5 minutes


 2 eggs
2 oz of low-fat cream cheese
2 sun-dried tomatoes (packed in oil), chopped
1/4 tsp salt
1/4 tsp smoked paprika
1/4 tsp garlic powder
1/4 cucumber, sliced thinly
a handful of spinach leaves
2 slices of sprouted grain bread (or whatever you have on hand)
salt and pepper

1. Place eggs in a pan, fill with water. Bring to a boil, and lightly boil eggs for 5 minutes. Place right away under ice-cold running water in sink for about 5 minutes to stop the cooking process.
2. Get out a small bowl, and mix together cream cheese, sun-dried tomatoes, salt, smoked paprika, and garlic powder.
3. Toast bread (optional). Divide the cream cheese mixture between the two slices of bread, add cucumber slices (about 4 per bread). Place spinach leaves on top. Slice eggs up, and place on top of spinach. Salt and pepper as desired.

Who likes to change it up? 
  
~Chop up some Swiss chard or other greens instead of spinach.
~Use different spices like chipotle chili powder, cumin, chili powder, or onion powder. Mix it up!
~Try different veggies like grated carrots, sliced bell pepper 
~Instead of sun-dried tomatoes, try chopped roasted bell pepper.
