Monday: Smoky Corn Gouda Pizza

The first thing my husband said to me when he tasted this pizza is "This is the BEST pizza you have ever made." I gotta say...I was super surprised how good this one turned out, and will definitely be making it again. What shocked me even more, is the kids LOVED it. Usually if I try to put veggies on their pizza they take them off, but they ate ever last bite! This pizza recipe doesn't have the traditional tomato sauce, instead just brush some smoked paprika and olive oil for it's base. YUMMY! 

Pizza Recipe
6 servings

2 ears shucked corn

2 TB olive oil, divided
1/4 tsp smoked paprika or crushed red pepper (if you don't have smoked paprika, I would HIGHLY recommend you get it. The flavor is amazing and a huge difference from regular paprika)
1 garlic clove, minced
1 pkg of dry yeast (2 1/4 tsp)
3/4 cup warm water (100-110*, divided
1 cup shredded smoked gouda cheese (or smoked mozzarella)
1 cup red onion, very thinly sliced
1/4 cup cherry tomatoes, halved
1 1/2 tsp lemon rind, grated
2 TB chives, chopped (optional)
Click on link: Pizza Dough Recipe -couple changes I made...I used only 2 cups of all-purpose flour and added 1/4 cup flaxseed meal. I used a pizza pan instead of cast-iron skillet, and used 1 TB cornmeal.

1. Prepare grill or broiler. Place corn on grill rack or broiler pan coated with cooking spray. Cook 10 minutes, turning occasionally. Cool. Cut kernels from corn to measure 1 cup, set aside.
2. Place 1 TB oil and smoked paprika in a small bowl. Heat in microwave for 1 minute. Add garlic.
3. Preheat oven to 500*F.  After you have gone through all the steps of making the pizza dough, spray a round pizza pan with cooking spray. Sprinkle 1 TB cornmeal over it. Add pizza dough, and make a crust by crimping the edges with fingers to form a rim. 
4. Brush dough with oil mixture. 
 5. Sprinkle with cheese. 
6. Top with corn and onion. Sprinkle with 1/4 tsp salt. Bake for 10-12 minutes or until golden. Sprinkle pizza with lime rind and optional chives. Watch your family DOWN this pizza! :)

Plan and Prep Ahead

Here are some helpful techniques to make life a little easier once dinner time hits. These tips will especially help those that work full-time and don't have a lot of time to prepare dinner.

~Chop veggies ahead of time.
~Grate cheese and keep refrigerated until time of use.
~Mix together oil mixture and keep on counter until time of use. 
~Grill corn, cut kernels from corn and keep in airtight container in fridge.

Who likes to CHANGE IT UP? 

~Try grating a different smoked cheese like smoked cheddar, etc. 
~Add smoked sausage or chorizo to pizza.
~Add sliced roasted red bell pepper for more color. 
~Instead of the oil mixture, try this pizza with tomato sauce. 
~Use chili powder instead of smoked paprika.

This was unusual. I made this pizza without "changing it up" and it was definitely something different for us. I'd give it a B+ rating but then I'm a stickler for pizza like it used to be. MOM
