Vegan Meatballs


A friend heard that we were on a vegan diet, and let us borrow one of his favorite vegan cookbooks called Ecological Cooking. It's one of those hidden gem cookbooks that is not by anyone famous/celebrity or well known cookbook author/chef, and has over 500 meatless, dairy-free recipes! It's only $4 on amazon, so if you want to try some fun vegan recipes, I would highly recommend this one. I quickly bought my own copy after I tried a couple recipes in it.  



Some of the recipes in Ecological Cooking are "no-brainers" like "Rice with Red Beans" where the ingredients are "Rice and Beans" and you boil the two for 30 minutes. But others, like this vegan meatball recipe that is called "Tofu-Nut Balls" in the book were out of this world, amazing. Even my meat-loving husband was a huge fan. So, if you don't have a good vegan meatball recipe, you have to give this one a try! There are a ton of leftovers that we are having for lunch tomorrow. Meatball sandwich anyone?


This is what our Vegan meal plan looked like yesterday:

Breakfast: soy yogurt with homemade nutty granola, a banana

Snack:  rice cakes with peanut butter, apple

Lunch: Leftover veggie loaf, peas, rice
Dinner: Spaghetti with vegan pasta sauce ,Vegan Meatballs, salad, sliced veggies with hummus (the kiddos were hungry yesterday!)

Meatball Recipe
 Makes: 15 meatballs Prep: 15 minutes  Cooking Time: 30 min

1 cake of firm tofu, drained well and mashed

1/2 onion, minced
1/2 cup raw walnuts or pecans, ground in blender or food processor
2 TB smooth peanut butter, or other nut butter
2 TB soy sauce
2 TB dried parsley flakes (may use 1/4 cup fresh)
1 TB mustard
1/4 tsp pepper
1/2 cup whole wheat flour

1. Place all ingredients in a large bowl. Mix well until the mixture holds together. 
2. Form into 1-2 inch balls. The smaller they are the quicker they will cook, vice verse
3. Preheat oven to 400. Cook for 15 minutes, flip the meatballs to the other side and cook for another 15 minutes until brown on both sides. You may also pan fry if you wish.
