Pesto Chicken Roll-ups


 I love it when our grocery store does a buy 1 get 1 free deal on chicken. I cram our freezer full with as much as it can handle, and then we will live off of chicken for a while. So I'm always trying to find new things to make with it. 

Last night we had a Spaghetti dinner with Spinach-Walnut Pesto sauce and grilled chicken breast slices. Speaking of pesto, here's a little tip when making a pesto for Spaghetti. You will want to save at least 1/2 cup of pasta water to add to your pesto. You probably won't use the whole 1/2 cup, but mix in 1 TB at a time until you have a sauce consistency. That will make it nice and creamy, and will turn it into a saucy texture as opposed to a spread or dip.  

Anyways, we had lot's of grilled chicken and pesto leftover, so today for lunch I made Roll-ups. So delicious that my son asked for seconds. My 4 year old son and I have been having some fun bonding time, since our 6 year old daughter is in 1st Grade now and is in class all day. He says he misses her a lot but likes all the "Mommy and Me" time he is getting. :)

These Pesto-Chicken Roll-ups are great when you don't want to make an elaborate meal, are on a time crunch, or don't want to cook anything. They can be served with a simple green salad, a hearty vegetable soup or with a side serving of chips.

Roll-up Recipe
 Makes: 1 serving Prep: 10 minutes  Cooking Time: 0 minutes

1 flour tortilla (or whole-wheat)
1-2 TB low-fat cream cheese
1-2 TB pre-made Pesto (try the Spinach-Walnut Pesto)
1 TB green onion, dark green part minced
handful of spinach leaves
Grilled Chicken breast, sliced thinly
 salt and pepper (optional)
Seasoning of choice (I used a grilled chicken blend)


1. Warm tortilla up for 5-10 seconds in the microwave. Let cool slightly. Spread cream cheese on to tortilla. Spread pesto over cream cheese. 
2. Sprinkle green onion over pesto. Layer spinach on top.
3. Add thinly sliced grilled chicken breast. Sprinkle favorite seasoning on top. 
4. Roll up tortilla tightly. Cut in half.

Who likes to change it up?


~Instead of spinach use raw kale, butter lettuce or shredded red cabbage.
~Use slices of red onion instead of green onion. 
~ Add raw veggies like bell pepper, cucumber, or julienne carrots.
~ Chop up some sun-dried tomato and add to mixture. 
~Try a can of tuna, roast beef slices, lunch meat instead of chicken.
