How to Blanch, Roast and Peel Hazelnuts


One of my favorite types of nuts are hazelnuts, but a lot of recipes call for peeled hazelnuts. Such hard work! I found a way that is very simple and the skins are literally falling off after you are done. 
You boil them with baking soda. There is a chemical reaction that happens and those pesky skins come right off. So simple! Now you can enjoy your favorite hazelnut recipes without much work. YEY!

 
Blanching Hazelnuts Recipe

raw hazelnuts with skins on
2 TB baking soda
2 quarts of water


1. Bring baking soda and water to a boil. Gently place hazelnuts in the water and boil lightly for 3-5 minutes. 
2. Drain and run them under cold water for 1-2 minutes.
3. With a clean dish towel, rub off the skins if they haven't already come off.

Roasted Hazelnuts Recipe

 1. Heat your oven to 350*F. Bake your hazelnuts on a rimmed baking sheet for 10 minutes or until golden brown. Let cool.

While the skins didn't slip off in the pan for me (my hazelnuts were very fresh..maybe that's why?)... once I removed them from the water the skins slipped right off. I had perfectly gorgeous and clean hazelnuts! Thanks for the tip!!!

I had trouble getting the skins off. I tried the towel method but it was messy and I found I was having to handle individual nuts. Time consuming! I figured if I could get them to rub against each other while rinsing I'd be in control of the task. I used a salad spinner basket and a soft dish brush to scrub and agitate while rinsing away skins under running water. This worked perfectly and was fast.
