Chunky Peach Popsicles

 
Want to find the perfect summertime treat? Cool off with these homemade peachy popsicles that will delight parents and kids alike. They are filled with chunky fresh peaches, juicy lemons/oranges and a splash of vanilla.  

Best part? You control what goes in to this icy dessert, like how much and what kind of sugar you use. My daughter's favorite thing about these Popsicles were the chunky peaches swirled throughout this icy delight.

Popsicle Recipe
Serves: 6 Prep: 5 minutes Cooking Time:  0 (YEY!) minutes


1 1/4 lb ripe peaches (4), halved and pitted
1 lemon, juiced
1/4 cup freshly squeezed orange juice (1 small)
1/4 cup sugar (I used 1/4-1/2 cup agave syrup)
1/4 tsp vanilla extract

1. Coarsely chop peaches in food processor. Transfer 2 cups of the chunky peaches to a medium bowl. Add lemon juice, orange juice and sugar to taste to the food processor. Puree until smooth. Add to bowl with chunky peaches and stir in vanilla.
2. Divide the mixture among Popsicle molds. Freeze until set, about 2 hours. Enjoy!

~Switch out peaches for nectarines.
