One of the main staples in Vegetarian/Vegan cooking is a good broth recipe. Making your own broth for soups, stir-fry's and many other meals is essential if you want to get the best flavor, less sodium, save you money and eliminate any icky preservatives in whatever you are cooking.
I use this veggie broth fairly often, and it is really very easy to make. Chopping the ingredients doesn't take very much time, because the cuts don't have to be perfect or the same size. The longest part is just waiting for the broth to cook (about 1 hour). This recipe will yield 8 cups, which is two quart size containers worth.
What if I don't use all of the broth? I usually freeze it in ice cube trays. Two cubes measures out to be about 1/4 cup of broth. Then I place the cubes in a ziploc freezer bag, and it will keep for 2-3 months. When you are making a recipe that calls for broth, either place the desired amount in a glass container and stick it in the fridge overnight to thaw, or place it in the microwave and defrost it the same day. Easy-Peasy as my kids would say!

1. Throw all ingredients in a large, heavy pot. Add 8 cups of fresh water. Bring to a boil.
