Mexican Rice


This has been a favorite side dish that I've been making for our family for several years now, and it's a great complimentary meal to burritos, tacos, enchiladas, and anything else you can think of.



Even though brown rice takes a little longer to cook, it is so much healthier for you. If I had to choose healthy over time spent, I usually pick the healthier option. The ingredients are simple, and don't take a lot of time to prep. A lot of the flavor comes from browning the rice before boiling it, so make sure you don't miss that step

Rice Recipe
 Makes: 6 servings Prep: 10 minutes  Cooking Time: 40 minutes

1 cup brown rice
2 TB olive oil
1 onion, diced
2 cloves garlic, minced
   1/2 tsp salt
1/2 tsp chili powder
1/8 tsp chipotle chili powder
1/2 cup tomato sauce or puree 
2 1/4 cup vegetable broth
Monterey jack cheese, shredded, optional (try Vegan Cheese)
  

1. Brown rice in oil in a medium sized pot for 4-5 minutes or until browned. 
2. Add remaining ingredients and simmer, covered for 40-45 minutes or until liquid has evaporated. 
3. Sprinkle cheese on top at the end if using.

Who likes to change it up?


~Add 1 chili in adobe sauce, that has been seeded and chopped for extra spice. 
~You can also transfer cooked rice to a 8x8 glass pan, and microwave cheese until melted right before you serve it.
~If you are short on time, white rice only takes 20-25 minutes to cook.
