First ingredient...Cauliflower. One of my favorite vegetables. I love how versatile it is! It is easy to puree or blend into other foods, like mashed potatoes. Or it can be the main attraction like Cauliflower soup.
Second ingredient...Nutmeg. One of my least favorite spices. It can be very overpowering if too much is used in a recipe and it usually doesn't stand well on it's own (like cinnamon does). I don't use it very much, unless I make my Healthy Pumpkin Muffin recipe.
Sprinkle nutmeg, olive oil and a little salt on cauliflower? Amazing! This is such a simple recipe, and makes an excellent side dish with grilled salmon or BBQ chicken. Enjoy!

1 head of cauliflower, chopped
2-4 TB olive oil
1/4 tsp nutmeg
1/4 tsp salt

1. Preheat oven to 350 °F.
2. Place chopped cauliflower on a baking dish, drizzle with olive oil.
3. Mix nutmeg and salt together in a small bowl.
4. Sprinkle over cauliflower.
5. Bake for 20-30 minutes, or until cauliflower is cooked through. You don't want it mushy, but not super crunchy either.

~Sprinkle some parmesan cheese the last 5 minutes of baking time, and omit the salt.
